Let me introduce myself. My name is Kayleigh May, I am a mother of two beautiful boys and wife to a husband who is truly amazing. I currently own my own photography business, All Things That Grow Photography. And in September.... I'm going back to school to complete a Communications degree. My life as a mother is busy, and I love to find shortcuts in cooking, and cleaning any way I can. I love getting my boys involved in cooking the food that they eat. I find they tend to eat more food when they have a hand in making it. I love baking, and eating baked goods. My husband however loves savory foods, and meats. Our family loves barbeque, and even more so, making the most outrageous burgers. Stay tuned to see what we put into those suckers.
My kitchen has changed in the past few months. In November 2013 I decided that my diet must be effecting my health, and some changes needed being made. After some light research I decided to follow the Paleo diet. I'm not usually one to just jump onto the bandwagon that everyone else seems to be jumping on, and I am definitely not one to follow the latest eating trend. Having arthritis since 17, I have gotten used to the swollen fingers, and cracking joints, I no longer even turn my head when others glare at me after my hip cracks during walking.
Paleo during the first month was hard, my body took a bad turn and I went through withdraws like crazy. I didn't know how addicted my body was to gluten.
Now it is 5 months later and my body is adjusted to a gluten free almost paleo lifestyle. I have made adjustments in my diet to suit my needs. There are some 100% no-no's in my diet. Gluten is one of them.
What was hard about paleo?
The hardest part of going full paleo was going out to family to eat. It is so rude to not eat anything or to bring your own meal. I worked hard at trying to fit in at dinners, but felt a little left out.... And then came dessert... No more for me at family gatherings ever it seemed.
How I Cope.
I made adjustments. When I am out of my home I am just gluten free, nothing else.... It's too hard for others to work around me.
I make my own dessert. That's right, If I can't eat dessert when everyone else is, I feel dead inside. It is my favorite thing about get-togethers. So I now bring my own, I don't like icecream on it's own as a dessert and typically that is all they have to offer me since cakes and everything else usually have gluten in them.

My Spices: I went a little Epicure crazy, Especially when I realized that they were part of the Non-GMO project, All Gluten free. (that is right my friends everything in the catalogue is 100% gluten free.)

What is coming up in my family?
My husband is coming home. After 6 long weeks of working overseas, he is on his way home for his 4 weeks to spend with me.
Marathon- We are running a marathon on June 1st. Alright 1/2 marathon. This will be my husbands second 1/2 marathon, and my first. I am horrible at distance running. I like to run speeds in short stints. (secret, my training has been going horrible.
My youngest son, (my koala bear, and hence forth shall always be called Koala in this blog) starts a school readiness program May 5th. Koala is very snuggly and I 100% extra coddle him because he likes to snuggle and cuddle and give love whenever he can. He is also very empathetic.
Pooh Bear, My oldest son, loves to help out in the kitchen. He like his father prefers the savory dishes. Tomorrow Pooh Bear goes to piano, Then we have company for a late lunch/ dinner. Pooh Bear will help me make the dinner.

In your coffee press put:
1/2 lemon, cut in slices.
chunks of fresh ginger. (peeled)
Honey to taste.
